Ingredients

  • 2 lbs red potatoes, unpeeled, cut into 3/4 inch wedges

  • 3 Tbsp extra-virgin olive oil

  • 1/2 tsp table salt

  • 1/4 tsp pepper

  • 2 Tbsp fresh rosemary, minced

  • 1 garlic clove, minced

Directions

  • Adjust oven rack to middle position and heat oven to 425 degrees. Toss potatoes with oil in a bowl and season with salt and pepper. Arrange potatoes in a single layer on a sheet pan, with either cut side facing down. Cover with foil and roast for 20 minutes.
  • Remove foil and roast until sides of potatoes touching pan are crusty and golden, about 15 minutes. Flip potatoes over and roast until crust and golden on second side, about 10 minutes.
  • In the last 3-5 minutes of roasting, sprinkle rosemary and garlic over the potatoes.

Notes

  • If using very small potatoes, cut them in half instead of into wedges and flip them cut side up during the final 10 minutes of roasting.
