GARLICKY KALE AND SWISS CHARD

We love the beautiful colors and simple flavors of this healthy side dish. These hearty greens are delicious sauteed in good olive oil, lots of fresh garlic and crushed red pepper flakes. It can be served as a side to pretty much any main dish or with a fried egg on top for a light and healthy meal.

This recipe starts off by sautéing lots of garlic and red pepper flakes in olive oil until garlic is fragrant.
Once the garlic is fragrant, stir in the kale for about 2 minutes. Since the kale is more hearty than Swiss chard, it needs to cook a bit longer to bring out its earthy and almost-nutty sweetness.
Swiss chard is then added and mix with kale to cook. Love the colors!
Chicken broth is then added to the greens, stir, then cover and cook until the leaves are wilted and the stems are tender. Feel free to use vegetable broth if you would like to make it vegan.
Salt is added at the end to enhance these vibrant greens. This easy side would be a great accompaniment to any main dish!

Ingredients

  • 1 bunch Lacinato kale (also known as Tuscan or Dinosaur kale)

  • 1 bunch Swiss chard

  • 1 tablespoon olive oil

  • 4 garlic cloves, minced

  • ¼ teaspoon crushed red pepper flakes

  • 1/2 cup chicken broth or vegetable broth

  • Salt to taste

Directions

  • Trim ends, rinse, dry, and thinly cut Kale with stem and set aside.
  • Trim ends, rinse and dry, and thinly cut Swiss chard with stem and set aside.
  • Heat oil in a very large skillet. Add garlic and red pepper flakes and sauté for 30 seconds, until garlic is fragrant.
  • Stir in the kale for about 2 minutes and then chard for an additional 2 minutes.
  • Add chicken broth to skillet, stir, then cover and let cook for 2 – 4 minutes, until kale and chard are wilted and stems tender. Uncover, stir and cook for 2 minutes longer. Season to taste with salt.
