Ingredients

  • 5 1/4 ounces bittersweet chocolate chips

  • 14 ounces heavy cream

  • 3 large egg whites

  • 1 ounce sugar

  • Sweetened whipped cream, for garnish, optional

  • Shaved bittersweet chocolate bar, for garnish, optional

  • Pomegranates seeds, for garnish, optional

  • Sweetened Whipped Cream, for garnish
  • 1 cup cold heavy cream

  • 1 tablespoon of confectioner sugar

  • 1 teaspoon of vanilla extract

Directions

  • Place chocolate in a large heatproof bowl set over (not in) a pan fo simmering water, stir chocolate until melted and smooth. Turn off heat and let stand. Beat the cream over ice until it forms soft peaks. Set aside and hold at room temperature.
  • With a mixer, whip egg too soft peaks. Gradually add the sugar and continue whipping until firm. Remove the chocolate from pan and fold in the egg whites all at once. When the whites are almost completely incorporated, fold in the whipped cream. Cover the mousse and refrigerate for approximately 1 hour or until set.
  • Use disher to scoop mousse into goblets (or preferred serving dish) and topped with sweetened whipped cream. Garnish with shaved chocolate and pomegranate seeds, if desired.
  • Sweetened Whipped Cream
  • Prep Time: 10 minutes
  • Whip the cold cream in medium bowl using a hand mixer (you can use an electric mixer fitted with a whisk attachment). When it starts to thicken, add the confectioner sugar and vanilla extract and continue to beat until firm. Don’t overbeat.
