These baked sweet potato fries strike a perfect balance of sweet and savory and are guilt-free and gluten-free. To make it healthier, we kept their skins on. A super easy and quick to prepare dish!

Ingredients

  • 2 medium sweet potatoes, scrubbed

  • 2 tablespoons good olive oil

  • 1 tablespoon light brown sugar

  • ½ teaspoon kosher salt, plus extra for sprinkling

  • ½ freshly ground black pepper

Directions

  • Preheat the oven to 450 degrees. Line sheet pan with parchment paper and set aside.
  • Halve the sweet potatoes lengthwise and cut each half into 4-6 long spears (about 1/2 inch wide). Place them on the lined sheet pan and toss with the olive oil. Spread the potatoes in one layer.
  • Combine the brown sugar, salt, and pepper and sprinkle on the potatoes. Bake for 15 minutes on upper middle rack and then turn with a spatula.
  • Bake for another 5 to 10 minutes, until lightly browned. Sprinkle lightly with salt and serve hot.

Notes

  • Sweet potatoes may be peeled if desired. The thinner the wedges of sweet potato, the crisper it will get. You will need to adjust your cooking time accordingly since it will not take as long.
